A wholesome simple soda bread. This combines wholemeal, white flours and porridge flakes. Best eaten fresh within a few days with plenty of butter.
I have fond childhood memories of this bread being prepared by my Mum when we had surplus, or even souring, milk. I love the moist texture and feeling of goodness that this bread evokes. My favourite topping is with a fruit rich strawberry jam, although a good marmalade works too – and I just happen to have some in my store cupboard in case you are interested.
